I NEVER use a dehydrator dries out venison TOO much. Venison doesnt have the fat content of beef keep in mind. Before I made my smoker from an old fridge I used to do my jerky in the oven, put a large pan of water on the lowest rack to keep the venison moist as it dries, i set the oven on the lowest setting and set a 1 inch square block between the oven door to keep it open just enuff to maintain a perfect heat source.
